This seafood paella is inspired by the Marina Alta seafood paellas of Alicante and is packed with lots of flavor. First, a salmorreta is made with ñora peppers and then used to infuse an all natural broth using gulf-shrimp shells, heads, and blue crab. Then squid and calamari are fried in organic extra virgin olive oil to provide a base of texture and flavor to the bomba rice. The paella is then finished by adding delicious Gulf shrimp.

Valencian Style Paella

This is the dish that started it all. The broth for this paella is made in the actual paella pan. First chicken and pork ribs are fried in organic extra virgin olive oil. The bits and pieces left behind by the meat endow the sofrito, made with roma tomatoes, with tremendous flavor. Then fava style green beans are added which give the paella incredible textures. The broth is reduced in the pan in preparation for the grand finale where bomba rice is cooked to perfection.

Caramelized onions, squash, red peppers and other vegetables are the star of this vegan paella. Attention is paid to not overcooking the vegetable and the different cooking times for each. The vegetable broth is made with all-natural ingredients to ensure a subtle and savory bite. Extra time is taken to reduce the sofrito and bring about a delicious socarrat at the end. (Other vegetables may be substituted depending on availability, I always try to go to the farmer’s market first to see if there is something I can add).
